Step into a panetteria, and the first thing that greets you is the smell. Warm, yeasty, a little toasty at the edges. It is the scent of flour, water, salt, and time coming together into something timeless. For anyone who loves good bread, there is no better place to be.

But what exactly is a panetteria, and why does it hold such a special place in Italian food tradition? Read more in our new blog!

The Heart of Italian Bread Tradition

A panetteria is, quite simply, an Italian bread bakery. The word comes from pane, the Italian word for bread, and it describes a shop devoted to the craft of baking loaves the traditional way.

In Italy, the panetteria is more than a place to buy bread. It is a daily ritual and a cornerstone of the community. Families stop in each morning to pick up a fresh loaf for the table, because in Italian homes, bread is not an afterthought. It is part of nearly every meal. It soaks up sauce, carries cured meats and cheeses, and brings people together around the table.

What sets a true panetteria apart is the dedication to craft. Real Italian bread relies on a few honest ingredients: quality flour, water, sea salt, and either yeast or a natural starter. There are no shortcuts. The dough is given time to ferment slowly, which is what builds that deep flavor, open crumb, and beautifully crisp crust. It is a craft passed down through generations, and it is one we are proud to carry on.

The Breads of Bricco Panetteria

Here in the North End at 241 Hanover Street, we bake a range of breads rooted in this tradition. Every loaf is made with care, using unbleached, unbromated flour and, for many, a fermented whole wheat starter. Let us introduce you to each one.

Ciabatta

Ciabatta is the bread that captures the soul of Italian baking. Its name means “slipper” in Italian, a nod to its rustic, flattened shape. Inside, you will find an airy, open crumb riddled with holes; outside, a thin, crackling crust. Made simply from wheat flour, water, sea salt, and yeast, it is endlessly versatile. We offer it in large and small loaves, plus a sandwich size perfect for building your lunch.

For those who want a little more, we bake two beautiful variations:

  • Olive Ciabatta is studded with briny kalamata olives, adding a savory, Mediterranean depth to every bite.
  • Prosciutto & Parmesan Ciabatta folds delicate Prosciutto di Parma and nutty Grana Padano cheese right into the dough, turning a humble loaf into something rich and indulgent.

Baguette

The baguette may have French roots, but a great loaf knows no borders, and ours is a study in craft. We bake several styles, each with its own personality:

  • Italian and French baguettes offer that classic, slender shape with a crisp crust and tender interior.
  • The Dragon Tail is a playful, twisted loaf with extra crunchy edges for those who love a crackling crust.
  • The Eppi is shaped like a wheat stalk, with sections you can tear apart by hand, making it as fun to share as it is to eat.
  • The Demi is a smaller portion, ideal when you want fresh bread without the full loaf.

Many of these are made with 100% organic whole wheat flour, wheat germ, and a slow-fermented starter, giving them a wonderfully complex, wholesome flavor.

Sunflower Batard

The Sunflower Batard is a loaf with real character. A batard is an oval, free-form shape, shorter and plumper than a baguette. We pack ours with raw sunflower seeds, bulgur, and golden flax meal, all built on a base of organic whole wheat flour and a natural starter. The result is a hearty, nutty loaf with a satisfying chew and a touch of earthy sweetness. It is wonderful toasted, and even better with a smear of butter or soft cheese.

Mountain Boule

A boule is a classic round loaf, and ours, the Mountain Boule, is a thing of rustic beauty. Made with organic whole wheat flour, bulgur, sea salt, and our whole wheat starter, it has a robust, full-bodied flavor and a sturdy, crackling crust. This is the kind of bread made for slicing thick, dipping into olive oil, or anchoring a long, leisurely meal with family and friends.

Miche

The Miche is our nod to old-world, country-style baking. This is a large, hearty loaf built to be shared and to last. We blend organic whole wheat flour with dark rye flour and wheat germ, then let a natural starter do its slow, patient work. The rye lends a deep, slightly tangy flavor and a dense, satisfying crumb. Available in both large and small sizes, it is a loaf that rewards anyone who loves bread with real depth and history.

Raisin Oval

For a touch of natural sweetness, the Raisin Oval is a delight. Plump golden raisins are folded into a dough of wheat and organic whole wheat flour, with wheat germ and a slow-fermented starter rounding out the flavor. It strikes a lovely balance: sweet enough to enjoy on its own or with morning coffee, yet hearty enough to pair beautifully with cheese. Toast a slice and you will see exactly why it is a favorite.
